Stuffed Bell Peppers

Recipe loosely borrowed from Emerill:

  • 4 bell peppers – choose your color
  • 2 cups cooked Jasmine rice
  • 6 small turkey sausage patties
  • 1 pound ground turkey
  • 1 tspn pepper
  • 2 cloves of garlic
  • 1 tbspn Mrs. Dash seasoning
  • 1 tbspn sun dried tomato paste
  • 1 stalk of celery

Preheat oven to 350 degrees. Boil 4 cups of water. Cut tops off peppers and clean out seeds and insides. Add pepper bottoms to water and let boil for 5 minutes. Drain and set aside.

Brown ground turkey. Add sausage patties and break into pieces. Set aside. Chop garlic and celery. Lightly brown garlic. Add celery. Combine with meat mixture and rice. Add  Mrs. Dash, pepper and sun dried tomato. Mix.

Spoon mixture into peppers. Arrange peppers in an oven safe dish with one inch of water in bottom. Replace pepper tops. Cook for 20-30 minutes or until peppers are starting to wilt.

Remove from oven. Remove lids and serve.
