Dairy-Free Mushroom Tart

  • 1 tablespoon olive oil
  • 1 (10 ounce) package fresh mushrooms, sliced
  • 1 large onion, chopped
  • 5 tablespoons butter
  • 3/4 cups unsweetened soy milk
  • 1/2 cup chicken broth
  • salt and pepper to taste
  • 1 teaspoon basil
  • 1 pie crust

Preheat oven to 350 degrees.

Melt butter and combine in a small bowl with soy milk. Set aside

Heat olive oil in large skillet. Add mushrooms and onion. Cook on high heat for 5 minutes. Lower to medium heat and add soy milk, butter and chicken broth. Cook, stirring occasionally for 15-20 minutes. Add salt and pepper.

Pour mixture into pie crust. Some liquid may remain.

Cook for 40 minutes.

Turned out tasty, but a bit too soupy. Try adding some flour to thicken it up or skip the chicken broth.
