Baked Potato Chips

  • 3 russet potatoes, scrubbed
  • 2 tbspns olive oil
  • Salt
  • Pepper
  • Garlic
  • Fresh parsley, chopped


Preheat oven to 350.

Cut potatoes into paper thin slices. Skin on or off, your choice. I prefer skin on for the added nutrients.

Toss potato slices with olive oil, salt, pepper, garlic and parsley. Feel free to add any other flavors you enjoy. Arrange on a foil covered cookie sheet. Do not overlap potatoes or they will not get crispy.

Bake at 350 for 30 minutes or until browned. Remove from oven and transfer to a cooling rack or cool surface to crisp.
