Egg Salad Sandwich

  • 3 eggs, hard boiled
  • 1/8 cup green onions, chopped
  • 2 tbspns mayonaise
  • Pepper
  • 1/2 tspn cajun seasoning
  • 2 slices of the bread of your choosing. I prefer sourdough or wheat.

Remove the majority of yolk from the eggs. A little big remaining is good for coloring. Chop egg whites into small pieces.

Combine eggs, mayonaise and onions. Mix well. Season with pepper and cajun season to taste.

Refrigerate for 30 minutes to cool mixture.

Toast bread and top warm bread with egg salad.
