Vegetable Omelet

    • 3 medium eggs
    • 1/2 cup chopped bok choy or spinach
    • 1/3 cup mushrooms, sliced
    • 1/4 cup onions, diced
    • Garnish with pepper

Whisk eggs in small bowl.

Combine bok choy, mushrooms and onions.

Heat nonstick pan. Pour egg into pan and let cook for 1-2 mins.

Add vegetables to one side of egg and fold over. Cook, flip and enjoy.
