Hot chocolate

Recipe from Food Network

  • 2 cups Vanilla Silk Soy Milk
  • 3 1/2 ounces bittersweet or semisweet chocolate, as preferred (difference in chocolate will change levels of dairy)
  • 1 cinnamon stick
  • 2 teaspoons honey
  • 1 teaspoon brown sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons spiced rum, or to taste


Put the soy milk into a saucepan and break the chocolate into pieces and add to the soy milk along with a cinnamon stick, honey, and sugar and heat gently until the chocolate is melted.

Add the vanilla and mix with a small hand whisk and still whisking, add a spoonful of the rum first and taste to see if you want more. Add more sugar if you want this sweeter, too. Take out the cinnamon stick and pour into 2 cappuccino or caffe latte cups.

 

My best friend, Alexa, and I usually go out on Friday nights. We usually go dancing, to a play, a comedy show, a nice dinner, etc. It’s been getting pretty cold lately and neither of us felt like getting dressed or going out in the cold. So, instead, we decided to have a cozy night in with warm drinks and quality computer time. (Yes, we did sit side-by-side and work on our computers.)

Alexa is a huge fan of chocolate, so there was no doubt the drink had to be creamy and chocolately. I like alcohol for the warmth and relaxation, so that was a bonus for me. I did a little bit of Googling and came across this recipe for hot chocolate with a twist.

We doubled this recipe to fill two big coffee Starbucks cups and have some extra for when we drained our cups. We actually didn’t get to the extra because it was so rich and creamy, but it’s saved for later! I had mine with rum, but she chose to substitute the rum for Kahlua since she’s not a big fan of alcohol. The hot chocolate was very rich and thick. Subtract chocolate if you aren’t a fan of thick drinks. Top with whipped cream or marshmallows if you dare!
