Greek Salad

Recipe from

  • 1 head romaine lettuce- rinsed, dried and choppe
  • 1 red onion, thinly sliced
  • About 10 pitted black olives
  • About 10 pitted greek olives
  • 1/2 green bell pepper, chopped
  • 1/2 red bell pepper, chopped
  • 2 large tomatoes, cut
  • 1 cucumber, chopped
  • 6 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 lemon, juiced
  • ground black pepper to taste

  1. In a large salad bowl, combine the romaine, onion, olives, bell peppers, tomatoes and cucumber.
  2. In a separate bowl, whisk together the olive oil, oregano, lemon juice and black pepper. Pour dressing over salad, toss and serve.

This was probably the most involved salad I have ever made. Tons of yummy ingredients, but it took time to get everything just right. Definitely worth the work! This salad was light, full of great flavors and paired perfectly with my chicken souvlaki.
