Slow Cooker Lentil Minestrone Soup

  • 2 cups lentils, rinsed
  • 1/2 cup diced celery
  • 1/2 cup diced carrot
  • 1 onion, peeled and diced
  • 4 cloves garlic, minced
  • 1 (28-ounce) can diced tomatoes (with juice!)
  • 1 tablespoon Italian seasoning
  • 2 teaspoons paprika
  • 1/2 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 2 cups hearty torn greens, like kale or chard (if you’d prefer spinach, stir in before serving)
  • 4 cups vegetable or chicken broth (optional: add another 1 to 2 cups of broth if you’d like before serving)


Prepare your slow cooker. Put the rinsed lentils into the bottom of the slow cooker. Add the diced celery, carrot, onion, and garlic (if you have a food processor, it might be helpful to use).slow cooker soup

Add the entire can of diced tomatoes (juice included), all seasonings and torn greens. Stir in the broth (I used chicken, but any broth will work just fine).

I’m on a new mission to cook healthier dishes. That means no white sugar, no white flour, no white rice and no corn syrup. If you know me at all, you know I love to cook really rich, fatty foods so this is a bit of a challenge. Luckily, my new slow cooker makes life a LOT easier!

This soup was extremely simple to make. I put it all together in 20 minutes before leaving for work one morning! The finished soup is absolutely delicious and perfect for a cold day. I would recommend adding another cup or two of broth. The lentils soaked up most of my broth and left me with more of a minestrone stew.
