  • 1 small watermelon
  • 2 cups dairy free Cool Whip – defrosted
  • Fruit and/or nuts for decorating – I used strawberries and nectarines

  1. Cut the ends off the watermelon to make it flat on both sideswatermelon cake
  2. Carefully cut the rind off the watermelon so that it is round on the sides and flat on the top and bottom
  3. Using a rubber spatula, spread Cool Whip on sides and top of watermelon
  4. Decorate with fruits and nuts as desired
  5. To serve, cut slices like cake
  6. To store, cover tightly and refrigerate

This dish is absolutely delicious, refreshing and healthy! Recommended for picnics and barbecues. 🙂
